Ageing
From 2 to 4 years
Vinification
The grapes are picked by hand, then pressed entire in a pneumatic press. The pressing is done in a slow way in order to obtain a light skin maceration, possible thanks to the dark skin of the red sylvaner. The vinification is then made in the traditional way, as for the white wines of Alsace.
