Description
Reaching such a high level of overmaturity is very rare for a Riesling. It is an exceptional sweet wine, with a well marked character.
Terroir
Planted on a granite hillside, the vines benefit from constant sunshine.
The entire surface of the soil is covered with stone, which allows the natural thermal heat to be retained at night. The grapes are thus constantly in ideal conditions.
For this Sélection de Grains Nobles, there is an over-ripening of the grapes and a concentration of noble rot. At harvest, at the end of November, the grapes had a candied aspect.
Pairing
It will be perfect with the appetizer, foie gras, or dessert. You can of course enjoy it without any accompaniment!
Service
Serve between 8 and 10°C
Ageing
It is a wine for laying down, which can be enjoyed today as well as in 10 or 15 years.
Vinification
The grapes are picked and sorted by hand, then pressed in a pneumatic press. Traditional fermentation under temperature control.
