Cousin of the Pinot-Blanc, this Auxerrois is the perfect accompaniment to starters, poultry and asparagus.

Terroir

This wine comes from an alluvial soil by runoff from the plain.
The terroir, very poor in humic matter, brings a lot of finesse in its whole structure, thanks to the immediate infiltration of water.
The root system is very deep, thanks to the work of the soil, and makes it possible to obtain a healthy vine.

Pairing

Goes wonderfully with starters, poultry, fish in sauce and asparagus.

From 2 to 4 years

Vinification

The grapes are picked by hand, then pressed whole in a pneumatic press. Traditional fermentation under temperature control.
